This Cava from Montsarra is extremely dry, showing light lemon rind and refreshingly crisp acidity. Spanish cava is made just like Champagne, but in this case the varietals used are Macabeo, Xarello, and Parellada (instead of Pinot Noir, Pinot Munier, and Chardonnay).
