I served my 1990 Simard last weekend with spicy Italian Chicken, asparagus with parmesan, and field greens topped with feta - the wine was so husky and alive I advised my guests to not have seconds if driving and had the greatest portion myself.

I had two bottles of Simard 1990 in my cellar and, reading the reviews, decided not to serve them to guests. What a mistake! Maybe some people didn't have properly cellared bottles but mine (I have just drunk the second by myself) were extremely enjoyable - deep dark and delicious (this evening was with a steak, white asparagus and parmesan fresh from Rome). I will not make my drinking decisions on the basis of reviews on blogs again!
